Finished in a second charred oak barrel to deepen its complexity, this Unwind exclusive delivers layers of caramelized sugar, maple syrup, toasted wood, and warm spice that make it impossible to put down.

Tasting Notes

Nose
Dense sweet oak leads right away, layered with maple syrup, caramelized sugar, vanilla bean, and roasted marshmallow. A deep barrel char note comes through like dark cocoa powder, balanced by burnt cinnamon, toasted sugar, and subtle dark fruit. As it opens, the maple becomes even more intense, with hints of wintergreen, anise, seasoned leather, sweet grain, and pastry.

Palate
Big, sweet, and coating from the first sip. Maple syrup, honey, molasses, chewy caramel candy, toasted marshmallow, and vanilla sugar rush across the palate. The sweet oak backbone keeps everything grounded, while barrel char, toasted almond, cinnamon, and baking spice add depth. It has a rich, oily mouthfeel with layers of caramelized sugar and roasted vanilla that continue to build.

Finish
Long, sweet, and mouth-coating. Maple syrup, honey, sweet oak, toasted cinnamon, barrel char, and caramelized sugar linger for a very long time. The finish stays rich and sticky, almost like syrup over waffles or pancakes, with enough oak and spice to keep it from becoming one-dimensional.
