We also spend a great deal of time researching the brands and styles our customers are looking for, while continuing to explore lesser-known distilleries that may be producing exceptional whiskey. Our goal is to balance familiar favorites with new discoveries.

We remain open to tasting barrels from any producer and across many styles—we’re never restricted to just one category or distillery. In the end, the decision always comes down to the palate. The best barrel wins, not the hype.

We enjoy working with smaller distilleries because they offer greater flexibility when it comes to barrel selection. This allows us to request a larger pool of samples and taste through a wider range of whiskies, helping us dial in the exact flavor profile and characteristics we’re looking for.

Larger brands typically limit stores to just a few samples—usually three or four. While their quality is often very consistent, the smaller selection can limit the ability to explore and fine-tune the final pick.

Pricing is extremely important to us, and we do everything possible to select barrels that deliver real value. A common benchmark in today’s market is roughly $10 per year of age, and we keep that guideline in mind when evaluating a barrel.

If a barrel doesn’t meet our value standards, we simply pass on it—even if the brand name or hype could justify a higher allocated price. Our focus is always on quality, transparency, and making sure the whiskey is worth what our customers are paying.

When tasting through barrels, we always consider the type of palate the whiskey will appeal to—beginner, intermediate, advanced, or highly experienced. Our members are always at the forefront of that evaluation.

Most of our selections tend to lean toward more advanced and sophisticated palates. That said, this doesn’t mean a beginner can’t enjoy them. The whiskey will still be approachable, but many of the deeper nuances and subtle layers are often better appreciated with time and experience in tasting.

Our barrel selection process involves multiple rounds of tasting. We start with the full set of samples and gradually narrow the field—favorites move forward while others are eliminated. As we progress, we often request additional samples, revisit the finalists, and mix and match them side by side to confirm our top choices.

We also compare our potential picks against similar styles and products in the market. This helps us understand where the barrel stands among its peers and ensures the final selection truly earns its place.

Only a small percentage of the barrels we taste ultimately make it to our store. We believe patience is key in the selection process. If a barrel isn’t the right fit, we’re not afraid to pass on it.
