We're excited to introduce our latest Unwind Store Pick: Onyx & Amber 12 Year Single Barrel Bourbon. O&A gave us the opportunity to taste through a wide range of barrels and simply choose the one we liked best. The biggest surprise came after the barrel was already bottled—we couldn't believe the proof was only 103.3. We're usually surprised when a barrel comes in higher than expected, so this was a fun reminder that proof can surprise in both directions. We love exploring how proof and age shape whiskey, and this barrel delivers maturity, depth, and balance without needing extreme proof to get there.

Tasting Notes

• Nose: Mature sweet oak, roasted vanilla bean, brown sugar, and concentrated red and black cherry lead the way. Old leather, dusty books, caramel candy, peppermint, toffee, cinnamon, nutmeg, milk chocolate, and light barrel char develop with time.
• Palate: Brown sugar caramel, mature oak, cherry syrup, roasted vanilla bean, and toffee, followed by roasted almonds, peanut brittle, black licorice, cinnamon candy, and powdered sugar. As it opens, deeper notes of brown-butter caramel, milk chocolate, leather, baking spice, and cherry cola emerge.
• Finish: Long and coating with lingering sweet oak, caramel, roasted toffee, vanilla bean, cherry, cinnamon, and a subtle cola note.
