Dave Phinney. Mare Island. Bloody Butcher Corn.

Savage & Cooke Bloody Butcher Bourbon is the heirloom grain expression from Dave Phinney's Mare Island distillery — named for the Bloody Butcher corn variety, a striking red-kerneled heirloom corn that was widely grown in the American South before the rise of commodity yellow dent corn. Bloody Butcher corn brings a distinctive spicy, earthy character to the mash bill that sets this expression apart from conventional bourbons. A bourbon built on rare grain, wine country instincts, and the Savage & Cooke commitment to doing things differently.

Tasting Notes

Nose: Distinctive heirloom corn character — spicy, earthy, and rich with caramel, vanilla, and a warm complexity from the Bloody Butcher grain
Palate: Full-bodied and expressive — dark caramel, spicy corn, baking spice, and a distinctive earthy depth from the heirloom Bloody Butcher mash bill
Finish: Long and warming with lingering spice, caramel, and a uniquely characterful close
