Pernod is the original French anise spirit — created in 1805 and the direct descendant of the absinthe tradition, reformulated after the absinthe ban to become the pastis-style anise spirit that has been a staple of French aperitif culture ever since. Made from star anise, licorice, and 14 plants and herbs, it delivers a clean, aromatic character that is lighter and more herbal than Ricard, with a distinctly Pernod elegance.
