The traditional clay oven roasting imparts a distinctive depth of cooked agave character that sets Azuñia apart from añejos produced using modern autoclave methods, while the 18-month American oak aging develops the vanilla, caramel, and toasted wood notes that define a well-crafted aged tequila.
